This recipe gives clear and easy instructions for making the classic, fluffy cake.

Ingredients

  • 12 large egg whites (about 1 1/2 cups)
  • 1 teaspoon cream of tartar
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup flour, sifted

Directions

  1. Wash hands with soap and water.
  2. Preheat the oven to 325 °F. In a large mixing bowl, beat the egg whites until they are foamy.
  3. Add the cream of tartar and beat until stiff, but not dry. Gradually beat in the sugar
  4. Add the vanilla and salt and then gently fold in the flour.
  5. Pour the mix into an angel food tubular pan (10 inches) and bake for 1 hour and 15 minutes, or until the top is nicely browned.

This recipe calls for egg whites, what do you do with the egg yolks? Most low income families cannot afford to throw the yolks away. You should have a suggestion or link for a recipe for using the yolks so they do not go to waste.
